Spicy Beetroot Soup Recipe

Although I’m not a huge fan of beetroots I genuinely think this vegan soup is fantastic! It’s sweet and spicy at the same time and you can make it quickly from very basic ingredients. Oh, and it has a great colour, too! Shall we give it a go?

To serve 4 you need:

  • 5 beetroots (wedged)
  • 1 medium onion (chopped)
  • 2 cloves garlic (grated)
  • 1 tsp fresh ginger (grated)
  • 1 tbsp lemon/lime juice
  • 400 ml coconut milk
  • 1 vegetable stock (dissolved in 1/2 cup water)
  • 1 chilli pepper (chopped)

Place beetroots in a pot with water and vegetable stock, cook for about 15 minutes. In the meantime heat up 2 tbsp of coconut milk on the frying pan, add ginger and garlic when heated, toss with a spatula for a while. When fragrant, add the onion and chilli pepper. Fry for about 2 minutes. Add to the beetroots with the rest of coconut milk and lemon juice. Cook for another 15 minutes. Put in a food processor and blend until smooth. Serve with coriander or chives and your favourite seeds.
