3- Minute Lunch Recipe (No Cooking!)

This surely isn’t the most sophisticated recipe you’ve ever come across but it still has a lot going for it:

  • it’s tasty
  • and super easy
  • the fastest lunch ever- takes about 3 minutes to make
  • doesn’t require cooking so you can make it anywhere
  • it is very nutritious, keeping you full for long
  • it’s healthy, too

My current situation (I already mentioned having no gas in this post) + having very little time for food preparation forced me to be more creative in the kitchen and out of all the things you can make without a cooker, this combination seemed the healthiest choice. It’s been a real life-saver!

To serve 2 you’ll need:

  • 1 tin lentils
  • ¼ tin chickpeas
  • 8 sundried tomatoes, finely chopped
  • 1 handful spinach/coriander, chopped
  • Salt+lemon+olive oil+herbs/ pesto

Mix lentils, chickpeas, sundried tomatoes and leaves together. If you’re using spinach, add some green pesto. If you prefer coriander, it goes better with lemon juice, salt, a few drops of oil and your favourite herbs. Don’t forget to give it a proper stir. That’s the basic version, you can add some seeds and feta cheese, or even grated cheddar, if you prefer that one- I’ll keep my version vegan this time. Heat up in a microwave (before adding cheese) and enjoy 🙂
