Although I love hummus (who doesn’t?) it’s so popular these days that most of us have probably mastered it by now. Therefore, today I’d like to present 4 other spreads which are as delicious with freshly toasted bread as they are with veggie sticks- hope you give them a try 🙂
Kale and parsley pesto spread
You will need: 2 cups kale leaves (stems removed), 1 cup parsley leaves, ½ tsp. salt, ¼ cup olive oil, 1/3 cup walnuts, 2 tsp. lemon peel, 2 cloves garlic, 1 tbsp. yeast flakes
Mix all the ingredients (despite olive oil) in the food processor, when ready add olive oil and mix a bit more. Ta-dah! Enjoy with fresh tomatoes.
White bean spread
You will need: 1 can white beans, 1 large onion(chopped), 2 bay leaves, cloves garlic (chopped), ½ tsp. salt, ½ apple (peeled), 2 tbsp. cooking oil, 1/3 cup water, ½ bag marjoram
Heat the oil in the frying pan. Fry the onion and garlic with salt and bay leaves until the onion gets golden brown and crunchy. In the meantime blend the beans and apple with water in the food processor. When the onion is ready, transfer the bean mixture to the frying pan. At the beginning it’s going to look like an omelette- no worries, 5 minutes later all the water is gone and you get nice and thick spread. Add marjoram and give it a solid stir. Remove bay leaves before eating. Enjoy with cornichons.
Red bean spread
You will need: 1 can red beans, 1 red onion(chopped), 2 cloves garlic (chopped), ½ tsp. salt, 1 chilli pepper (chopped), 2 tbsp. cooking oil, 3 tbsp. lemon juice
Heat the oil in the frying pan. Fry the onion, chilli and garlic with salt for 5 min. Blend the beans with lemon juice in the food processor. When the onion is ready, transfer the bean mixture to the frying pan, stir and wait until it gets solid. Enjoy with red pepper.
Sunflower seeds spread
You will need: 1 cup sunflower seeds (soaked overnight), ½ cup coriander leaves, 2 tbsp. lemon juice, 3 tbsp. water, salt & pepper (to taste).
Mix all the ingredients in the food processor until smooth. Enjoy with sundried tomatoes.
