Food Diary 2- Healthy Autumn Goodies

Autumn
Today I’d like to present my favourite dishes made of typical Autumn veggies. I hope this will give you some inspiration before heading off to the local food market 🙂

Breakfast:

Grilled veggies and hummus toast

Prepare hummus (my version contains chickpeas, tahini paste, salt, garlic, lemon juice and sundried tomatoes), mix it with some buckwheat and spread on your toast. Add grilled veggies of your choice (I’d suggest courgettes, aubergines and red peppers) as well as a few avocado slices (unless you’re able to resist). This insanely delicious breakfast will easily keep you going for the next few hours.
 

Morning snack:

Stuffed red peppers

Light, easy to make and ideal to share. Mine were filled with stewed onions, lentils, sundried tomatoes and sesame and kept in the oven for around 20 minutes 🙂
 

Lunch:

Courgette noodles with pumpkin sauce

This modified version of traditional courgette spaghetti Bolognese sends your taste buds to another planet!  To make the sauce you need to mix pumpkin puree with finely chopped roasted onions and garlic cloves, add some chilli powder, coconut milk and your favourite herbs/ spices. Serve hot!
 

Afternoon snack:

Kale crisps

My favourite film marathon snack is made of kale leaves drizzled with oil, dusted with spices and baked for 12 minutes. I promise- it tastes much better than it looks!
 

Supper:

Pumpkin soup

Highly appreciated on a cold, rainy day 🙂 To add some definition to mine, apart from typical ingredients (pumpkin puree, vegetable stock, onion, garlic, nutmeg & cinnamon, if I remember correctly), I used red pepper and sundried tomatoes. Divine!
